These “Anything Goes” cookies are one of my favorite flexible and fun recipes. Start with 3 basic ingredients and then get creative! The list of add-ins and combinations is endless. You are bound to find one everyone in your family will love, but it is also easy to make a variety each time. They are freezer-friendly, toddler-safe (depending on mix-ins), and perfect for an on-the-go teen.
Ingredients
2 medium ripe bananas
1 cup quick oats
1 tsp vanilla
½ cup of mix-ins (optional)
3 TBS nut butter (optional)
Instructions
Preheat oven to 350 and line a baking sheet with parchment paper. In a medium bowl, mash bananas breaking up any large chunks. Add in vanilla and nut butter, if using. Stir in oats and any other mix-ins. Scoop into balls about the size of 1 TBS and flatten slightly. Bake for 8-10 mins or until edges are golden brown.
